Cookies & Cream Protein Balls

These vegan protein balls are the perfect snack for lunch boxes or an after dinner treat.

You only need a few ingredients and a food processor need to whip up these low sugar cookies & cream balls!

Ingredients:

  • 1 cup oats
  • 1 cup vegan vanilla protein powder
  • 1/2 cup melted coconut oil
  • 2 TBS maple syrup
  • 1/3 cup cacao nibs
  • 2 squares (dairy free) dark chocolate

Method:

  • Place all ingredients into a food processor
  • Pulse until the mixture binds together and becomes sticky.
  • If the mixture is too dry and crumbly, add more coconut oil. If it is too wet, add a tablespoon of oats at a time until it becomes the desired texture.
  • Use a spoon to scoop even amounts of mixture out and roll them into balls.

Makes ~12 medium sized balls.
