no bake Vegan protein cups

These no bake vegan protein cups are perfect if you need a sweet treat and want to keep it healthy and low sugar. They're also super easy and quick to make with only 7 ingredients and no baking necessary!

Protein base:

  • 1 cup nut butter
  • 1 1/2 scoops vegan protein powder
  • 1/2 banana
  • 1 tsp vanilla essence
  • 2 pitted dates

Chocolate layer:

  • 1/3 cup dairy free chocolate chips or buttons
  • 1 tbs coconut oil


Place all protein base ingredients into a food processor. Blitz until combined and forming a sticky texture. If it's too wet, add more protein powder. If it's too dry, add a bit more banana.

Once the sticky texture is achieved, scoop the mixture evenly into a muffin tray, pushing down on the mixture to help it form a cup shape.

Melt the chocolate and coconut oil and spread evenly across the protein cups.

Optional - Top with cacao nibs or dried cranberries. 

Freeze for 4-6 hours.
